
Heirloom Tomato Tart
3-4 heirloom tomatoes
1 bunch of fresh basil
6 cloves of garlic
6 ounces feta cheese
1 sheet puff pastry
1 egg, beaten
2 tablespoon extra virgin olive oil
1 tablespoon sesame seeds
salt and fresh ground pepper
1. Preheat oven 400°F
2. Slice tomatoes 1/4 inch thick, sprinkle salt on both sides and lay on towel to absorb moisture.
3. Prepare pastry sheet on lined baking sheet with parchment paper. Use fork to prick all over and create 1/2 inch border with knife, slicing only halfway through pastry - do not cut through. Bake for 15 minutes or until lightly golden brown and let cool.
4. Combine feta, peeled garlic, basil, evoo and emulsify until smooth. Spread evenly on puff pasty except at border.
5. Arrange tomatoes, egg-wash border and sprinkle sesame seeds. Bake for 15 minutes and let cool.
6. Slice and serve.
